Holiday dinner with sweet potatoes – recipe

Savor this tasty dish at Thanksgiving or Christmas. For those of us who enjoy sweet potatoes, this casserole recipe is a little different than most.

The best I can determine is that it’s a Christmas recipe from about the mid-20th Century.

Spiced Apple and Sweet Potato Casserole

1 (18-oz) can sweet potatoes, sliced
1 (20-oz) can sliced apples
3/4 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup pineapple juice
1/4 cup butter or margarine
Parsley flakes

Arrange sweet potato slices and apples in alternating layers in an 8-inch square baking dish, sprinkling each layer with cinnamon and nutmeg. Add pineapple juice. Dot with butter or margarine. Cover and bake in a moderately hot oven (375° F.) 15 minutes. Uncover and continue baking 20 minutes. Garnish with parsley flakes.

Spiced Apple and Sweet Potato Casserole

You can easily substitute fresh produce for the canned … your choice. But you’ll either have to precook the sweet potatoes and apples before adding them to the casserole, or bake it longer to cook until tender. You don’t want crunchy potatoes or apples.

This is a delicious recipe that’s not the usual marshmallow cream variety with sweet potatoes.

I’ve found many guests prefer this who don’t normally care for sweet potato casseroles. And it’s healthy, too.

Give it a whirl this Thanksgiving or Christmas. I think you’ll find yourself starting a new holiday tradition with this recipe.
